No Constitution class Lego kits?

Megabloks did have a beautiful version of the Enterprise which was rather large and the price at one point was really good but that set has been hard to find and people are now price gouging because it is rare.

Now that is impressive.... A true labor of love
Now the titular Dreadnought of the novel would be a great next project—because you actually want a faceted look for that one.

If you can make it in Minecraft you can make it in Lego.

Oh you mean the USS Vengeance, now that would work very well in Lego
 
A minifig scale 1:1 Enterprise is something you can stuff into a room...but would be very wonky. I sort of like the compromises where it's akin to the early, early draft enterprises, the one with as few decks as possible while the outer shape is alright. Best for fun, the budget, and showing off, and you can extrapolate it to other ships/sets since you're basically just remaking the sets than the ship.
