As long as somebody stopped him, it needn't have been Kirk and Spock personally. Kirk says "we", but the important part is stopping him, not who does (as far as Kirk knows, anyway).
Perhaps before McCoy went back in time, instead of following Kirk and Spock, she'd crossed the street to come to the aid of the drunk which McCoy's phaser would kill - assuming his death/disappearance matters little to the timeline compared to Edith's (he may have drowned and disappeared or died and was buried anonymously with little notice otherwise).

The second photo was probably taken not long after the model had been refurbished for exhibition.Well, it's not the same model, that I can tell from multiple examinations (Bridge dome height is taller in the original photo, U.S.S. Enterprise letting is bowed on the original model, multiple other indicators), but still a cool undertaking for sure.

The idea of the warp core originated with TNG. Putting a warp core on the TOS Enterprise is a retcon.
Matt Jeffries concept was the nacelles were self contained. His idea originated from the WWII bombers where the power came from each turbine. The rotating red caps on the nacelles evoked the idea of rotating propellers.
The idea that those rotating red caps are bussard collectors is also a retcon.
