Twenty years later what changes would be made to the Galaxy Class ships ? Quantum Torps ? Different shields ? more powerful phasers ? Bio neural gel pac circuitry ?

I think that alot of the "minor" tech would be updated...holographic viewscreen, weapons upgrades, stain resistent carpeting.

Just design the weapons pod so it had a base plate that matched the top of the interconnections between the engineering hull and saucer.
Saucer detaches, weapons pods base plate connects to the top of the engineering hull along with the pylon that supports the weapons pod, saucer reattaches to the top of the base plate.
Presto. You have your Galaxy class toting a large weapons pod that would include various types of hardware.

Hmm. Well, regarding crew complement, I do recall in "Yesterday's Enterprise," that Yar said the Galaxy-class was capable of carrying thousands of troops, so I can see a comparable increase in the Starfleet universe we know if families and civilians were no longer on board. Maybe they'd become even more multi-purpose, serving as troop carriers in some circumstances. Or maybe multi-generational ships for very long-range exploration/colonization to allow crew members to marry and have children.
