To answer the initial question...

Is there anything canonical to determine when Earth ships switched from fusion reactors to matter antimatter reactors?

They have access to AM-powered warp ships by 2067, when the "Friendship One" probe is sent into space. Since the launch occurs only four years after FC, and considering the theta radiation leak, the Phoenix very very likely uses antimatter as well.
