Is there anything canonical to determine when Earth ships switched from fusion reactors to matter antimatter reactors? Should the warp scale be different between those power sources?

I suspect you won't find anything. TOS had examples of non-antimatter powered FTL drives but that variety is gone, IMHO.
The Spaceflight Chronology features Earth's pre-warp vessels, the advent of warp drive, and beyond.
They have some details about Earth's most advanced fusion ship, right before Earth's first warp drive ship.

Measuring the Speed that your vessel is traveling shouldn't be dependent on what type of reactor you have.

Based on background information it seems like it maybe used a fission reaction in lieu of dilithium to regulate the matter/antimatter reaction.
So the FC ship used fusion for its warp drive?
We know it has an intermix chamber, but it theoretically could be mixing other stuff. My car has an intermix chamber, where it mixes gasoline and air, we just usually call it a combustion chamber.
Was it m-am powered or just antimatter catalyzed fusion?
"Intermix chamber" is mentioned in "Affliction" and "Gambit" as part of the m-am system so it was m-am powered, IMHO.

Not that I could find. However I didn't look in Discovery, SNW or Lower Decks.

True, plus a 21st century version of the term may simply refer to a central component of the Warp Drive.
I've always treated "Warp Core" to mean the Primary Reactor(s) that powers your Warp Drive.
My option was post WW 3, antimatter was hard to come by, but not fusion fuel, due to infrastructure destruction
