Let's be honest here, Mister Scott would have been cursing a blue streak when a stubborn plasma conduit broke down, or when he got into a bar brawl with some Klingons. The only thing stopping him was NBC's Standards and Practices.
And as for the "fucking cool" bit on DISCO, that helped to humanize what could have otherwise been a very dense chunk of expository technobabble and enabled a nice bonding moment between Tilly and Stamets. It was refreshing and delightful.
It's only "dragging Star Trek through the mud" if you think there's something wrong about profanity, as opposed to it just being a colorful mode of expression. And, seriously, do we really think that human beings are going to stop cursing in the future?
Of course not.
The occasional "shit" or "fuck" just makes the DISCO character seem more human.
