It probably would have taken too much power. Much easier to put him in his quarters for the trip. The amount of power it takes to run the force field keeping him inside, would surely be much less than keeping Suder himself in stasis.
Plus, it allowed for the possibility of Suder making himself useful during his confinement. Which is exactly what happened.

Not sure who else I would have like to replace Kathy outside of the main cast, but it's a safe bet Michael Dorn put his hat in the ring.
