They put a lot of resources into it, but if I read the designer's interviews right it's enhanced with CG - not all the displays are live, and the main viewer is only what she called a "green screen template." Which would make economic sense.
 
The way the episode went felt to me like they were hinting at a pike show, and the enterprise just gets better looking, does anyone know if there is a model kit based on it out

No model kit yet, but Eaglemoss does have two sizes of the ship as part of their Starships Collection.

I could be wrong, but I thought she was referring to how they didn't put those large transparent screens that are common at most of the stations along the sides of Discovery.

You're probably right, except for the bit about the main viewer:

We did discuss building it [as a] green screen set. Which it wasn’t. Just the front portion, the physical view screen that we normally build around it — we just did the green screen template for that. The rest of it we built.

That viewer is about 30 percent of the circumference of this design and no one touches it, so it figures that they'd save time and money there if practical.

One of the graphics people did say this on Twitter, which caused my confusion - when he says "VFX" he may be referring to the main viewer only:

#startrekdiscovery For the Enterprise bridge we animated at least 250+ screens. Both practical and for VFX. Such an extreme honour to add to this iconic set! Congratulations to the whole cast and crew.

Round 2 has a 1:2500 scale model coming out late this summer. I've pre-ordered it via CultTVMan
 
Sorry, @Dar70, but this just isn't any ship other than the Enterprise - no bloody A, B, C or D...

To be honest I kinda hope they do a new Five year voyage with Kirk and Crew. Make an actual reboot rather than a shoehorned Alternate Reality like the latest movies. It's time now I think. Discovery would be the jump off point. (The Picard show should remain in the original continuity)
