And Sci-Fi / Fantasy is allowed, but let's exclude Stan Lee, please, cause come on... way too easy.

I am almost tempted to allow that Simpsons/Stan Lee acatar just for pure awesomeness, but Stan Lee is a whole contest by itself, so better save it until then.

Sorry, have to discount that one. Leonard Nimoy didnt have the biggest part in the movie, but him being there was a major plot point, the entire catalyst for the story even.
This is by no means a cameo...

His appearance in Into Darkness would fit the bill, though.
