It was just a coincidence. WHen the chacter of Dr. Noonian Soong was created, he had nothing to do with genetics. That was created for Enterprise.
Arik Soong really was supposed to be Noonien's great-grandfather. However, there's no actual canon evidence about that (Do we know for sure that most of the Trek characters ever had sex? In some cases, two characters might have just been sharing a bed for whatever reason.). Umm, "canonically established" would require that the fact be mentioned or shown in one of the episodes or movies. Arik Soong's relationship to Noonien Soong never was.
