The Dominion would make for a temping target. Jem-Hadaar and Vorta would both make great drones (assuming they were compatible--- but the Borg are resourceful), they have a great deal of interesting technology, and the Founders abilities would be a tempted one to harness (again, if possible). Having said that, The Borg are also known to be very calculated in terms of cost/benefit and with such a command of other quadrants, waking that sleeping giant seems a little risky for the Borg-- despite the potential spoils.
In the event of a war between the two, it would be in Federation interests to ally with the Dominion against the Borg threat. The Dominion seeks control, not assimilation-- it's reasonable to assume humans would have continued to exist under a Dominion occupation--- whereas Borg occupation is certain genocide.
Come to think of it, a Federation/Dominion alliance against the Borg would make for a great 24th century movie... unfortunately the number of people with the Trek knowledge to enjoy it could never warrant such a project
