If they couldn't collapse it by conventional means, Sisko might have been able to convince the Prophets to close the other end of the Wormhole, or deny Dominion traffic through it. Again, all for the sake of Bajor.

That's what he did, that thing he did with the "Prophets" in "Sacrifice of Angels" wasn't a one-shot deal. The Prophets were now keeping ALL Dominion vessels from using the wormhole.

Yeah, but he did it late. If he had gone to them with the same argument before the wormhole was mined, or once they knew war was imminent, a lot of lives could have been saved. The strategic value of Bajor and maybe even DS9 would have been eliminated. If war still came, Sisko could rest knowing that Bajor was not really of any importance. As I recall it had been mined clean by the Cardassians. The Founders were practical. If Bajor was nothing more than a planet without any strategic vale or resources, the Female Changling would see no reason in attacking and taking it.
DS9, on the other hand, was still a base for Federation ships to launch attacks at Cardassia, it might have remained a military target. Then again after the Prophets closed the Wormhole to the Dominion, the Dominion lost interest with it. Even after Dukat closed the Wormhole, the Dominion seemed uninterested with Bajor or DS9.
And, again, without the wormhole the Female Changlings' threats of scorched Earth warfare were totally empty: Even if she ordered them to fight to the death they Founders would all still die, and all the Feds would have to do is wait until the Jem'Hadar ran out of ketracel-white.

Her scorched earth was aimed at the Cardassians meaning she would destroy them. Scorched earth means that the victors have little or nothing to left to gain. The idea originally was to deny the invading force any food that may have been captured, it was also used by invaders to further demoralize the conquered people. Her destruction of Cardassian cities was what drove the Cardassian military against her. Scorched earth, once begun, is no empty threat; and Cardassia was beingh scorched.
Her threat to Starfleet, the Klingons and Romulans was far from empty. She had enough ships and enough Jem'Hadar to give the Allies hell. An attack on Cardassia would have destroyed a large portion of the invasion fleet. And Sisko, Admiral Ross and Martok agreed that waiting out the Dominion was a bad idea because that would give the Dominion time to build ships and breed more Jem'Hadar.
The Jem'Hadar had no qualms about ramming ships, suicide missions or anything. They were told to fight, the fought. They would have fought until the last ship was destroyed and the last Jem'Hadar killed.
If the Dominion ran out of the Ketracel-white, The Jem'Hadar would be out of control before they died off. It would be an equally bad scenario as an invasion of Cardassia.
