I'll suggest Dexter from this list. Michael C. Hall is excellent in the role, which only makes his appearances in things like Gamer boggle the mind.
 
I voted for True Blood, but with a warning - every single episode ends with a cliffhanger, including the season finale. Only the first season is available, and season two won't be out until next May or June. With only 12 episodes, you'll get through it pretty quickly, but then you'll be hanging until season 2 comes out.

This is the last season of Supernatural. Depending on how fast you go through a "normal season" (22 or so episodes), you may want to watch another series or two, and then come back and start watching Supernatural season 1, and watch all five seasons straight through.

I haven't watched Dexter, so no opinion of it. Same with Weeds.

Mad Men, I only saw the first few episodes, and it's about the most boring shit ever put on film.

Smallville is complete and utter crap. I tried the first season, forcing myself to watch the first 10 episodes, and it was just abysmal.
 
Supernatural. It's ace!

First season is a mixed bag and the majority of the episodes are "monster/urban legends of the week" but the mythology is quite tight and gradually comes more to the fore as the first season progresses.
From season 2 onwards the show really stepped up a couple of gears quality-wise.
 
I was all excited to come and give you my advice, but I don't watch any of those shows....

Only seen the first season of Dexter, but I'd definitely recommend it based on that. Supernatural, I've heard nothing but good things about, and am planning on watching it myself some time. And the only reason I've stuck with Smallville for so long despite the over-abundance of crap is the tiny little bits of gold I've found along the way (plus the fandom).

Couldn't give you an opinion on the last three.
 
Of those choices, Dexter or Supernatural, both of which I just saw a season of for the first time. They're both pretty good. Super suffers from a lot of generic monster standalones but the most recent season which I saw had a good central storyline.

Are we sure about that? I thought both the actors said they were interested in continuing for Season 6.
No, Jensen Ackles and Jared Padalecki are definitely not interested in continuing the show beyond its planned five-year story. It's not because they're fed up with the show or anything like that, though. They did sign six-year deals, but Eric Kripke's contract expires after this year and he wants to end the show on his terms, and Ackles and Padalecki don't want to extend the story beyond its original plan. So they all want the show to end this season, but if the CW decides to renew it for next year and not bring back Kripke, Ackles and Padalecki are stuck and will have to honor their contracts.
