Maybe Uhura's quarters had that nifty third room that MU Kirk's did. Where Marlena disappeared into to change. It was way too big to be a closet. Even though they used the closet door.
The trouble is, we saw outside Kirk's cabin a few moments earlier (before he enters) and there is very clearly a side corridor there, with no space for a third room. I don't know who decided to put a small table & chair there (for a guard maybe?) but it very definitely can only be a corridor, albeit one which probably leads directly to Marlena's quarters.

Actually, it was when I first came across those images that I began to realise that a bathroom had never even been intended to be part of the cabin set. It's a great piece of research and clearly shows the size difference between the closet setup (TCM) and the restroom setup (MM). There's just no way those two areas are the same (not to mention that a corridor ploughs straight through the one shown in MM)That "room" where Marlene comes out of is the captain's wardrobe/closet. It was originally going to be seen in "The Corbomite Maneuver," where Janice would've pulled a fresh tunic for Kirk. But that moment was cut from the broadcast version, although it was filmed. See:

It looks like that wall in the extra room in "Mirror Mirror" is the same wall that was in Pike's quarters.

Though, it looks a bit taller in "Mirror Mirror".
EDIT: Just looked at the "The Corbomite Maneuver" deleted scenes page. That's totally the same wall from "The Cage." It even has the same coat hanger decoration. Though it looks a bit shorter in "The Corbomite Maneuver" than it does in "Mirror Mirror".
