That the Oyashio-Class would be an interesting tanker...so giving it some thought I sketched this beast up... Enjoy ;)

I do love both of these designs. Still fits that TOS aesthetic but varies greatly from what we'd seen on screen.
 
I like it overall, but would make it larger (some of the oilers and auxiliary ships for the USN are particularly large compared to what the ships alongside can be), and a bit bulkier, with some retractable booms, perhaps, etc. (T-AKR, ARS, AFS ships, for example)

Then again, I’m used to thinking along the lines of UNREP (Underway Replenishment) in addition to FAS (Fueling At Sea). Granted you could just use cargo transporters for that sort of thing, but still...

You are correct...but if you look closely, the bridge superstructure gives away how large a Connie would be in comparison...she's plenty large me thinks ;)

Even on the enterprise-d it looks on the spine of the Engineering hull has filler parts and other ports for resupply.

Yes the Ent D and pretty much every ship ever designed fully has that kind of option, but it has never been used...also in show, they have shown the use of freighters and other supply vessels. This is just an extension of that ideology.
