Casting Pike's Number One

Do we even know that they are looking to cast someone for this role? Might they not skip it entirely? The Star Trek Discovery novel "Desperate Hours" had no Number One, Spock was the first officer (unless I am mistaken?)

You are very mistaken

Number One and Saru had quite a few scenes together.
 
Might I suggest Rachel Brosnahan or Joan Cusack?

They should have her be promoted to Captain at the end of the story arc, with a line about it not being a Starship Class Vessel, to officially clarify the remarks in Turnabout Intruder to mean ships of the same class as the Enterprise.

I'd rather we just ignore that line from "Turnabout Intruder." No reason the entire franchise should be held hostage by one regrettable piece of dialogue from one terrible episode. It's a dated relic from the past that is best just swept under the rug.

For what it's worth, I gave Number One her own command in a recent TREK book and nobody at CBS batted an eye.

There's no reason, in 2018, why Starfleet would balk at putting a woman in command of a starship, no matter what class.

Nobody in universe would thing anything of it, just word a couple lines of dialogue in a reminiscent manner. Have Spock be pedantic about it being officially classified as a cruiser. That is to say, it's just coincidental that these (less than) 12 ships have men in command, rather than the whole fleet. Though you are right that it's probably better just to ignore the whole thing.

There's nothing the Enterprise can do that Discovery can't. In fact, there's one huge status quo smashing thing the Discovery can do that the (also, smaller) Enterprise can't.

They're both starships, TOS' idea that a starship is special is unfortunately as obsolete as the stuff about women not being captains.

That's not true. In fact, it's fairly reasonable to assume there are mission-specific things a Connie can do that a Crossfield can't (And vice versa.) in the same way there are things a Destroyer can do that a Cruiser or Frigate cannot.

I wouldn't mind seeing Sarah Shahi. It's probably too late to get Priyanka Chopra but I wouldn't mind seeing her either. I think Indira Varma would be a good choice as well. If Shohreh Aghdashloo was younger, I would really have liked her for the role.

(Just skimmed the thread and saw that Dave Steinman and I are of like minds when it comes to Shahi and Chopra. But instead of erasing my post, I'll just add to the growing chorus).

I'd say Shahi and Chopra are on the top end of the credible age range for the character, after all Burnham was only thirty during the BotBS (2256) and dialogue implied that she'd been a Commander for at least a couple of years at this point (IIRC she was a LT when she was assigned to Shenshou in '49).

Will Riker, the First Officer we know most about, was made LT CMDR and XO at about 26/27, and promoted to Commander - and offered either XO on the E-D or CO of the Drake - at 29/30. Sisko made LT CMDR and XO sometime between 28-35, and made Commander (probably as Project Defiant Director/Yard Supervisor) no later than 37.
 
It's come out that they've already made the first five episodes, so the role has probably already been cast.
