My favorite has been the uniforms from First Contact/late DS9.
And there's no topping the miniskirts from TOS.
Those uniforms would have been fine for parades or formal dress occasions, but they weren't at all suitable for general duty aboard a military vessel. Much too stiff and uncomfortable looking. Besides, all that red made everyone look like they belonged in a production of The Music Man.
I think the simple unisex tunics and trousers from the two pilots, "The Cage" and "Where No Man Has Gone Before," were the best-designed Trek uniforms in terms of comfort and practicality -- except for the lack of pockets. In "The Cage," we saw uniform jackets that for some reason were never used in the production episodes. It seems that jackets would be a good idea if you're beaming down to a planet where the temperature might drop below 60ºF. or so.

The ST:II uniforms are great but they really were too formal. The "Universal Armageddon!" scene in Kirk's quarters where he Spock and Bones are discussing the Genesis project never sat quite right with me. It didn't seem like the same characters in the same universe discussing the current mission as they were in TOS or even TMP. They were too formally dressed to accept as on everyday duty. It was like they stole away at a formal dinner party for a few moments in their dress reds. In the past I've chalked it up to them all being older, Kirk an admiral, and Spock a captain, but that wasn't it.
