Is there something specific that was said which would indicate that it was a healthy eye they removed? Just because she got assimilated with 2 healthy eyes doesn't mean they both stayed that way. Isn't it possible that it was only replaced after it became useless?

Setting aside that he's just strolling around making casual speculations avout things he's seeing for the first time, where does he state that the Borg are "Born Borg"? It seems he says the opposite here. They are born like any other baby, then assimilated. He certainly doesn't say that the Borg have mating practices, or carry babies to term, etc

Aside from Locutus and the Queen, I don't think there has been a fully matured Borg without an ocular implant. Usually the left eye has the implant.

I was just wonder this while watching Scorpion that the humanoid female Borg do seem to retain their breasts. While breast are not reproductive organs, a vagina, uterus and Fallopian tubes are. In male Borg, it would be the penis and testes.
Since the Borg do not reproduce sexually, these organs would be unnecessary and inefficient compared to assimilation. If they are removed either surgical or by the nanoprobes, would the Doctor have had to recreate Seven's reproductive organs? Would Dr. Crusher have had to recreate Picard's or would he have not been far enough in the assimilation process to need to have them to be recreated?

Assumed without evidence. Could have. Speculation. Worse, audience speculation. At the time "Q Who" was written, that part of Borg culture, such as it is, hadn't even been considered. As such, anything our heroes say, unless directly contradicted at some point, is meant to be taken as What Is Really Going On. And the postulate put forth by Riker was that the baby was indeed Borg by birth. No rescue, no 'victim of assimilation', no nothing. The baby was born Borg, and will never know any other way.
