My dad makes the best ribs. We get baby back pork ribs from the local butcher, he slow cooks them and then for the final sear on the BBQ I put on a mix of zesty BBQ sauce with a bit of Jamaican Jerk sauce and some Guinness added.

If you have them in the oven for 3 hours they are cooking slow. Then when they are on the grill comes the smoke.
