A space opera that's reminiscent of Deadwood (and with profanity if they please) would be great, but I don't see what that has to do with Star Wars. Deadwood-in-space would be best if it were independent of any existing franchise, without the burden of having to fit into an existing mythology, since it's not going to have the advantage of drawing upon the elements that made Star Wars popular to begin with."Deadwood minus the profanity" is exaclty what we want.
This all reminds me of people who want a Star Trek series, but then go on to describe something that isn't Star Trek-kish in the least.
Lucas has already got a rich and robust mythology that could be turned into a great live-action TV series, and although I'm skeptical that anything good can survive on broadcast, I don't see why a Star Wars series couldn't be family friendly. The approach that The Clone Wars takes is just fine, but ratchet back the dependence on action and beef up the political and psychological complexity, as well as the story complexity, for the adult audience.

The Star Wars cantina scene is Sesame Street compared with Deadwood. Do you mean just beefing up the colorful, outlawish elements? That's a long ways for the extremely adult themes of Deadwood. There's a lot of stuff you can do to make a series less sanitized and lifeless, long before you get into stuff like that vile plotline with the serial killer who was obsessed with a prostitute.
