I would like to ask you, if there would be no Jadzia, Ezri or Garak (who, as far as I know, are most probable partners for Bashir), who would end up with him? Or no one? I would really like to explore this alternative.

Dr. Elizabeth Lense, Julian's classmate at Starfleet Medical and Chief Medical Officer on the Lexington. They could have gotten along so well in "Explorers" that one of them asked for a transfer.
Kira. I would've loved to see if their real-life chemistry would've worked for the fictional characters or not.
Kira and Bashir rarely appeared on screen together, and in my most recent rewatch I specifically tried to look for scenes where they were together, and they were few and far between. But if I hadn't known that Alexander Siddig and Nana Visitor were married during the second half of DS9 and presumably dating for a while before that, I never would've guessed.

I've been watching DS9 episodes repeatedly these days. The only episodes I remember with those two as romantic partners were Our Man Bashir and Fascination. The first is a holoprogram and the other the result of Lwaxana Troi's sickness.
Another vote for O'Brien from me here. Garak/Bashir is my preferred pairing for Bashir but I wouldn't complain about O'Brien/Bashir either.

Kira reacted worse than Jadzia, in any case. So, redagless of what was objectively worse, subjectively, Kira wad more offended than Jadzia.

Personally I only found the last of those three particularly dubious, and only because it seemed to come out of nowhere. If TPTB had spent some time laying the building blocks for it, maybe it could have worked.
And, as soap opera as it would have been, there's a part of me that would have liked to see Janeway show some regret that she'd missed her chance to hop on the Chakotrain.
