It's for us that they use the letters! It's easier and cooler to call the various iterations as the A-ship, the B-ship, etc.

NCC-1701 only became significant when Starfleet decided to honor that particular vessel, its crew, and their achievements by giving its registry to the next ship with the Enterprise name. The adding of a suffix "-A" was merely a means of distinguishing the new Enterprise from the previous one.
Starfleet could have easily have given Harriman's Enterprise a new hull registry, but they obviously decided that a tradition was now in place to give subsequent Enterprises the 1701 registry. By the time of Picard--or "Picard of the NCC-1701-D"--1701 was not so much a continual recognition of Kirk's Enterprise, but of all of the Starship Enterprises that have carried that number, IMO. It remains to be seen how long Starfleet will continue this tradition--I said in my first post I doubt we'll ever see an Enterprise NCC-1701-Z--but traditions do tend to last for a long time regardless.
I'm thinking that Captain Morgan Bateson and/or Commander Worf will be given the Enterprise-E after Picard's semi-retirement, the X.O. left on the "Nemesis" cutting room floor will be brought aboard in another capacity, after Bateson's own crew (including his ex-X.O.) Gabriel Bush is given the Sabre-Class U.S.S. Bozeman-A.
