A series about the Enterprise C crewe?

Why is it a concern if she can ever be in credible danger? None of the series ever killed of a captain until the last episode of one of them (and even then it's a question of just how dead he is). And everybody knew it wasn't going to happen. Only once ws there some turmoil with Stewart and his contract that lead "The Best of Both Worlds" with a way to get rid of him if he didn't renew.

If anything we still have the rest of the main crew -- who knows how how long they were with her (even Castio).

Between the time of the launch of the Enterprise B, and the destruction of the Enterprise C, there was about a half century. If we have a show with the Enterprise C at a point fairly early in it's history, it's destruction could be multiple decades in it's future.
