A New Set for the Enterprise

What set that never existed aboard the Enterprise would you have liked to have seen on film? Let your imaginations run wild....
 
A large science lab with lots of blueshirts working in it, reporting to Spock in his office. Sell me on the idea that this is really a vessel of exploration.
 
I'd like to have seen Kirk's office. He had to have somewhere to handle mundane affairs, like personnel evaluations and Starfleet updates at some place other than his quarters or the center seat.
 
I've seen this question elsewhere-

What was in that little room at the top right of engineering?- You know, the room atop the ladder- Looks like a phone booth, yet several of the crew go in and out of the little thing.

Is that worth seeing? Perhaps not, I dunno.

Also, does our beloved original Enterprise have an equivalent of the Battle Bridge (not Auxiliary control)? Does it have an equivalent of stellar cartography? I ask, 'case the Continues crew showed us an early version of the Next Gen's Holodeck.
 
The idea of a swinging 60's Officer's Club sounds great. Scotty getting drunk, Uhura going onstage to sing, red shirts getting in bar brawls, waitresses in miniskirts, I could see it all now.

But how an you go on a mission of exploration in deep space without one of those? I'm sure even the NASA missions had them.
 
Some science labs under Spock would've been cool. Logically, he must've had a staff working under him the same way McCoy and Scotty did.

And it would've been really great to see Scotty working on the inside of one of the nacelles.
