A Cross-series Observation: If Klingons are such legendary warriors, why are they so easily defeated or dejected by Starfleet?

Indeed, yes. Reasonably, the Klingons are capable but the plot has them charge in to combat situations either unprepared to operate as a team, utilize melee weapons, or taken down by a blow to the guy then spine.
I prefer my Klingons to be sneaky intelligent bastards.
 
There is 1x person sitting at the Science Station.
Which is all Starfleet has on their bridges.
Or massive "Engineering Departments" like StarFleet usually has.

They probably have a few Klingon Engineering Officers and call it "Good Enough".
We've seen Klingon engine rooms, they're usually staffed just as much as Starfleet ones are.
 
If I remember right, the Klingons were outnumbered and fighting in a ship they weren't familiar with.
No, thanks to the entity causing emergency bulkheads to seal, the Starfleet and Klingon forces were exactly evenly matched in terms of numbers. Further, the alien took away all the modern weaponry and made sure both sides were evenly matched with simple melee weapons.

That's right about balancing the numbers. Having only swords and bladed weapons probably favored the Klingons, I bet they practice with blades way more than Starfleet. (Except Sulu.)

Klingon toughness is needs of the plot. Sort of like Starfleet security, ;)
Which reminds me of a few related tropes:



 
You are basing this on a 130 year window where we have seen the Klingons in action. What about the thousands of years prior...they may have been undefeated and feared across the galaxy...perhaps we only see them at their most vulnerable in a small piece of their history but over the course of centuries they were likely formidable
 
In the alternate reality seen in "Yesterday's Enterprise," different only because the Enterprise-C did not go back in time, the Klingons were going to defeat the Federation. We're supposed to conclude that they had that capability.
