JDW, I agree with you that there should have been a page with design specifications and measurements. I remember purchasing the blueprints, then finding a small meter-scale on the blueprints then measuring the ship with a yardstick to make my own specifications...this in the olden days before I had internet access.
But to answer your questions regarding specifications, "Starship Spotter" gives the Galaxy-class measurements of 641 meters long x 467.1 meters wide x 137.5 meters tall. This book was cowritten by Alex Rosenzweig, who is a moderator for the Trek Tech portion of the BBS.
Regarding the thickness of the hull, the "Star Trek:The Next Generation Technical Manual" breaks it all down; don't know off the top of my head, but it is about a foot-and-a-half thick.
Regarding deck height, I noticed in another thread (don't know how to link it up, sorry) in which the average deck height of the Galaxy-class breaks down to 3.274 meters in height. This was an average, of 42 decks spread out over 137.5 meters of habitable space, and does not include the thickness of the hull, or the thickness of the spaces between decks (which presumably are filled with equipment, Jeffries tubes, miscellaneous supply areas, etc).
