It sounds like Ultimate Voyage is clips and music from episodes and films dating back to TOS.

Live in Concert looks like it only featured ST09 and Into Darkness.

We recently saw Live in Concert in Toronto, and yes, it was ST09 film with a live orchestra. It really was excellent. I was hoping they'd do STiD as well as they have in other locales but it wasn't the case.

Star Trek: The Ultimate Concert starts in November in England. They haven't announced any other dates or locations, yet, but I've signed up for their emails notifications hoping that there will a Toronto date for that one as well some time in 2016. And you are right about this one, Melakon, The Ultimate Concert is to have clips from all iterations of Trek on the big screen with live music.
