In this Star Trek movie poster (my single favorite) there is a color spectrum, the Human is located in the section that includes among others the color red (Humans have red blood), the Vulcan in the section with green (theirs is green), and the Deltan is in the yellow section. Do you suppose that Deltan's possess yellow blood? Yellow blood does exist on Earth with certain types of sea life. The yellow coloration is due to a high concentration of vanabin. Yellow?
Spock is also in blue, that doesn't mean that half of his blood is green while the other half is blue. The visible color spectrum in ROYGBV, that's how the poster was set up. You're reading too much into this.
No, its just the color spectrum and the conventions of movie poster design. Shatner is on the left because he's the lead. Nimoy is on the right because he's the second lead. Khambatta is in the middle because she's an attractive young woman. I doubt Bob Peak even knew Spock had green blood.
Also the bright shaft of light shining down upon (or rising from?) her head may be symbolic of the climax of the film.
Ilia's in what's closest to normal, white light, suggesting her natural beauty. Spock being in the cold, blue/green light representing his alieness. Kirk in the warm colours representing his passion and Humanity. I never thought about it representing blood colours, but that's an interesting thought. Honestly, though, I can't think of what element would turn blood yellow. Does any animal even have that? Insects, maybe do. Bob Peak, who created this poster, was a genius of an artist. What a shame that hand-made, representational poster art is a relic of the distant past!
Sea cucumbers have yellow blood due to vanabin content - but vanabin is a vanadium-based pigment, not the oxygen transporter.
Then again, Vulcans are supposed to have green blood, but they have pink lips and tongues and red around the eyes. There's only so much you can do with makeup. The Andorians in Enterprise seem to have had some kind of blue dye applied to the insides of their mouths, but they still had visibly red rims around the eyes.
The bright yellow was probably the best color to be bouncing off her bald head, artistically speaking.
And, upon further research into the subject: "Blood Plasma is the pale-yellow liquid component of blood that normally holds the blood cells in whole blood in suspension. It makes up about 55% of the body's total blood volume." Or, so says Wikipedia, at least ...
One possibility is that vanabin is toxic to predators, so Deltan blood carrys vanabin as a defense mechanisum. Predators learned over time to steer clear of Humanoid Deltans no matter how hungry they were. Poison blood.

Hey, that's not the original poster art!? compare: why is that? BTW, I've no problem with Ilia having yellow blood. Can any color be discerned in the examination scene?
Ilia looks a lot cuter in the Jornada version ... not to knock Bob Peak's original design, because I think it's brilliant! But yeah, she looks really good in the other one.
