LED is LCD. LED just pertains to the type of backlighting that the LCD screen uses. I think your real question there should have been LCD vs Plasma. Both have their benefits and drawbacks, the best thing to do is go to a store and compare them.
Yes, you do want 120hz. A faster refresh rate is always better.
I'd buy a cheap optical cable and try connecting that from the DVR to the amp, and turn off the TV speakers. That worked for me when I had a similar receiver and an LCD HD set.
Last spring I upgraded my TV and receiver at the same time, so I could run every thing via HDMI.
I've got an older a/v receiver, and did exactly that: HDMI from DVR to TV, and TOSLink audio cable from DVR to receiver. No problems with mine.
