There are a fair few reboots out there now other than JJ's, it would be interesting to have a list in order to compare and contrast.
The most prominent one was easily Star Trek Reborn by Jeremy Grunloh, which presented Star Trek as an occupational drama, featuring Kirk, Spock and McCoy on the Enterprise with an elder Sulu as an experienced officer with a daughter, Demora. The website is no longer there, but it certainly wasa richly devised 'virtual series' with concept designs for the uniforms, Enterprise and characters.
Another writer on a 'virtual series' board wrote Scotty as female, paid tribute to George Takei by making Sulu gay, First Officer of the Enterprise and in a covert relationship with one of his crew, made Uhura a Federation Diplomat and used Vulcan culture as an allegory for Islam and cast Omid Abtahi as Spock, a scientist on detachment from the Vulcan Science Academy.
There are so many ways to retell a story.
A few people have had a go at Voyager too. There's Bry Sinclair's version featuring Riker as Captain, aswell asa crew shake up, and Blue McGee's pitch which hopefully we'll still get to read
