I find that its easier to skip the 'middle flunky' and just blame SYFY directly! Saves time..........
SyFy isn't completely to blame here. The truth is the writers spent two years on a storyline they have admitted could have been told in one and have done shit all with it.
I'm fairly sure that's not what they said at all, what they did say is that they could condense the remaining plot and finish the story in one season if need be. I think it goes without saying that any story can be rushed, any character development can be sacrificed for plot movement, but why would you, especially in a character drama?
In my opinion there is no such thing as a five year story that cna be condensed into one. A five year story is a five year story. It takes five years to tell, you need five years to tell it. However, it is possible to take a one year story and try and stretch it out to five years, which is what it seems has been done here.
And that was a choice made by the writers/producers which SyFy didn't influence in anyway. All SyFy did was pull the plug on a show which wasn't bringing in numbers.
Now, you can argue that SyFy's interfernace screwed the show over, and to an extent you are right. There's plenty of blame to place on SyFy for SGU's current predicament. But they can't be blamed for the story not being finished.

Actually, I believe the quote was meant to mean:
We have a 5 year story mapped out. If we are in danger of being cancelled, we can wrap up it up in another year. IE: 2 Years of the 5 year plan had already passed, but, they could make a whiz bang rocket speed plot acceleration and shove the remaining 3 seasons into a single one, if need be.
Now, don't get me wrong, I don't mean to defend the plot progression speed of the first two seasons. I agree the plot progressed too slowly, but, season 1 of most arc'ed shows takes awhile to find it's footing and to lay out the Universe and the rules thereof. I'm just saying, I don't believe what they were saying was we only have 1 year of story, but, we want to stretch it for 5 years.
Accelerating an arc too quickly (and skipping character growth, little things to build up and pay later, etc) can be jsut as bad as bad dragging it out too long, but, if you know you're facing cancellation, better to shove it all out there, so the few fans you do ahve can get closure.
For instance, Dollhouse, could easily have gone for a 3rd full season, and still be really full, but, because they were told S2 was going to be it's last Whedon rushed the remaining arc and shoved it all into the second season, it suffered from feeling rushed, but, he got all the high points in.
It wouldn't be a five year story condensed into one though would it? It would be a five year story condensed into three. And the only reason I can see for that not being possible were if you were making a plot driven story, which SGU isn't. The show is a character drama, the plot movement on a 'grand' scale has been minimal, because it doesn't need to be. The only series-wide plot arc is the mission, and I see no reason why that couldn't be finished in a third season. As I've said though, to do that would require losing much of what the show is about, you'd have to sacrifice character drama for plot progression, which is obviously something they wouldn't want to do unless they had to.
Maybe they also had a number of ideas or side stories they wanted to explore, but were prepared to leave them out if they only had a year left.
If the ultimate goal was to get them back to Earth, they could do that in a couple episodes let alone a whole season. Whether it'd be as satisfying as not a story is up to question.
This episode is a good example of how the show is shaping up with the supporting cast showing off the dynamic that has been developing over the last two years. If they had only been able to tap into this about 15 months earlier the show would have stood a better chance of lasting another year.
