i've only seen a few episodes of DS9 and was wondering if there are any interesting stories about the Gamma Quadrant? where we learn about the races that reside there?

There might be. There is this Dominion thingy, they play a role in an episode or two.
Let's see what I can remember, we have the Wadi, Pup, Tosk, the Hunters, Founders, Jem'Hadar, Vorta, Karemma, Yadarians, Teplans, Skreea, T-Rogoran, aliens who posed a holograms, Rakhari, Dosi, the species that left behind mind-control energy spheres for just anyone to pick up, and two species involved in "torture O'Brien" episodes, one by imprisoning him and the other by...well, to say what they did would spoil the episode.
If you can you should get your hands on the DVD and just watch DS9 through from start to finish.
I quite enjoyed both "The Quickening" and "Children of Time". YMMV.
I can only remember three species getting mentioned as getting kicked by the Dominion: the Yaderans, T-Rogorans, and the Teplans, all three were space-faring races but whether they were a major regional power or not is unknown.
My recommendation is the same as above, you should try to watch the show from start to finish rather than jumping around watching episodes randomly. Of the Trek series DS9 is the one that gives viewers the most reward for watching it from beginning to end.
