TUC "Guess Who's Coming to Dinner?" -- Romulan Delicacies (ex/Ale)?

I guess the chef of the Enterprise-A was Romulan or atleast had a weird habit of giving his dish the same appearance of the beverage. Anybody ever exactly wondered what the Hell it is (because I watched the movie and know I'm bored)?

Rumor has it that shatner requested some extra takes because he felt he "could do better." ;)
