I was at Costco the other day and I heard "red matter cleanup on aisle three" over the loudspeaker.

It was a mining ship, not a battleship. They obviously retrofitted it with weapons from the 24th century which would be superior to anything the Federation or Klingon empire had in the 23rd century. But probably didn't have much need for advanced shielding and such.

1) The Narada wasn't more advanced than the Jellyfish. It was just a mining ship outfitted with Borg technology the Romulans had been quietly studying for a while. The Jellyfish was a state-of-the-art vessel from the same era. Chances are the only reason Nero caught it in the first place is because he was sitting there in an ambush when Spock came tumbling out of the singularity.
2) As others have said, Nero made it clear that he didn't want to destroy the Enterprise. There's no way to misinterpret that when he first sees it, either. His initial command it to dismissively destroy it like the rest of the fleet, but once he zooms in and sees that it's the Enterprise he shouts for the other miners to stop the attack.
3) Again, it was just a mining ship with some Borg tech slapped on, and one manned by miners rather than soldiers. Its captain wasn't just a miner and untrained soldier, either, but a fanatical Captain Ahab type out seeking only psychological revenge.

Dark side of the red matter?
The Narada was probably the single most Shakespearean thing I've seen in Star Trek in a long time. It was a ship flown by an idiot, full of sound and fury, signifying nothing. That and the guy did like to shake a good spear. Actually it may not have been that long, I think I recall seeing something very similar in Nemesis; Not a good pedigree.
Did everyone forget that the big E came flying in guns blazing right when Nero was going after the jellyfish? That's why he didn't get it.
As for the Klingon losses, we didn't see the engagement; the Narada could have surprised the Klingons.
Hmmm, it just occurred to me that, while the Federation is grieving over the loss of Vulcan, the Klingons might be rallying the fleet to get revenge on the Romulans for the massacre at Rura Penthe!
