I was boiling some water to cook some pasta for dinner (Chicken Parmesan, Pasta, Sauce, Cheesy Garlic Bread.) So, out of "curiosity" I stuck a thermometer into the boiling water, knowing what to expect, and well I was wrong.

Everything I know is a lie.

The read-out on the digital thermo? 213.

Could lots of steam on its way out of the liquid (but not quite out) have rubbed against the thermometer?

Either that, or the thermometer isn't a very accurate instrument is all I can think of. Do you know its error rating?
 
Only the tip of the thermometer reads, it was submerged in the boiling water.

No idea what the error rating but I suspect that's where the discrepancy comes from. Because, if I understand correctly, if anything my ASL could've made the water's boiling point a bit lower than 212.
 
Impure water has a higher boiling point anyway (just like it has a lower freezing point), so regardless of your elevation, unless you used distilled water and a sterile pan (and leaving aside thermometer inaccuracy), it was never going to read 100C anyway.
 
I'd say having pasta in the water would make it pretty impure. :p

But yeah, that's why people often put salt in there too, to raise the boiling point of the water so the pasta cooks faster.

Pasta wasn't in there yet when I took the temp, but I did have salt in there -though I've never heard of that raising the temperature just that it adds good flavor/taste to the pasta.

I *always* salt my pasta water. Overly. It should taste like sea water.

Dude, he's an American. Of course it was never going to read 100C! ;)
