Another difference between the movie era TWOK uniforms and the 24th Century TWOK uniforms is that the movie ones had countless different colours for it's undershirts while the 24th Century version only had 3 colours which were white, yellow, and I think blue/green.
In fairness, we only saw three cadets in uniform. There were two other colors for the 23rd century Starfleet uniforms from TWOK, esp., red undershirts for cadets/trainees, and green undershirts for medical personnel, like Dr. McCoy. The other colors, white (command), blue/gray (sciences), and gold (operations/engineering), were simply the three divisions Picard, Batanides, and Zweller were in.
However, slightly off-topic, there has been some confusion over colors and departments. For example, the blue/gray shirt Chekov wore. He wore it while he was first officer on
Reliant, even though he probably should have worn white. Then, he seemed to serve as security chief on
Enterprise when he rejoined Kirk & Co. while wearing the blue/gray undershirt.
Then there's the real bad costuming mistake with Valeris from TUC. She was a full-fledged officer, not a cadet, yet she wore a red cadet/trainee undershirt, and her jacket had the blue/gray strap on the shoulder and left sleeve. It should've been all one color, and the color should've been gold (she was navigator) or white (as a command-track officer).
Speaking of the cadet color, I was never crazy about that shade of red as it clashed with the burgundy jacket. I would have used a diagonal strip of red cloth across the top of the uniform strap to denote the cadets' status, so everyone would've had the proper division colors.
