There are so many. Odo was a master of sarcasm. I think my favorite exchange was with Quark in Way of the Warrior, Pt. 2. Quark tells Odo he's going to defend his bar against the Klingons with his old phaser from his time on a Ferengi ship. Odo looks in the box, it's emtpy, save a note from Rom, that reads he took the gun apart to fix the replicator and that he'd return the parts soon. Quark is steaming and says, "I will KILL him!" And Odo replies and says, smartly, "With what?" -- RR
At the request of Commander Sisko, I will hereafter be recording a daily log of law enforcement affairs. The reason for this exercise is beyond my comprehension except perhaps that humans have a compulsion to keep records and lists and files... so many in fact that they have to invent new ways to store them ..microscopically. Otherwise their records would overrun all known civilization. My own very adequate memory not being good enough for Starfleet, I am pleased to put my voice to this official record of this day: Everything's under control. End log. Here's one of my favorites though it's not really a 'quote' as such (and it's not very insightful either but...): "Bzzzzzz...." *smacks lips*
"I have a full array of Starfleet weapons. Frankly I don't know that much about them, but I understand that they packed this little vessel with some pretty powerful stuff." Odo warning off the Attacking Miradorn in "Vortex" There are others, I just can't think of them off the top of my head.
The scene in Duet when he's talking to Dukat. "He says... his name... is Gul... Darheel!" Just the way that he says it and how he leans in closer with each word always stands out in my mind. Also in For the Cause right after Sisko finds out Eddington stole the replicators: "Starfleet sent Eddington here because they didn't trust me. Please remind them of that."
One of the earliest exchanges is the best. It's when Nog has been arrested and Sisko and Odo have Quark in his office. Sisko uses the arrest to get Quark to stay. Sisko says, "We need . . . a community leader! And it's going to be . . . you, Quark!" Quark laughs and says incredulously, "Community leader!" And Odo chimes in, "Seems reasonable! You have all the character references of a politician!" Then, at the end of that scene, when Sisko gets what he wants from Quark, Odo says, "You know, I didn't think I was going to like him!" -- RR
I kind of wish that, after he had his non-goodbye to Quark in "What You Leave Behind," Odo would have turned around before going through the airlock and given us one more trademark snooty scoff.
I watched "the passenger" this morning and a woman asks him, "What kind of fool are you?" He says, "My own special variety."
Odo says some really cool things but they are usually specific to the circumstances. He's not like Kosh with: That can be applied to so many things in the real world it is easy to remember. How often do you ask people to refrain from using their imaginations? psik

The very first episode involving me Gul Dukat, Major Kira Doc Bashir and of course Odo in a shuttle craft. BASHIR: They've got to listen to reason, haven't they? When we warn them what could happen if they go in there. "'ODO: Doctor, most people in my experience wouldn't know reason if it walked up and shook their hand. You can count Gul Dukat among them."'
