Beginning watching from the pilot...

I'm up to "A Man Alone" - I'm watching pretty much because Trek is the best in the way of reruns to watch of a morning. I've noticed...

Odo, especially in aforementioned ep, sounds, well, not Odo. What's up with that, I never noticed it in season 2 on?

Rom doesn't sound like the idiot-savant Rom we all know and love, sounds more like Jeffrey Combs, what's up with that also?
 
I'm in the process of doing the same thing. I watched Destiny yesterday.

You're right - it is quite interesting comparing the characters in the first season to the incarnations in the 7th. In the case of Rom, I think it is just a matter of the producers not figuring out exactly what they wanted to do with him yet. With Odo I think it's more a matter of good writing and character development. He really grows after finding his people and then choosing to exile himself. I won't spoil his final character development in case you've never watched DS9 to the end. I was also very intrigued by the developments we see in Kira and Garak over the run of the series. Watching all of the episodes in order gave me a much better idea of the nature of the Garak character and also allowed me to see how much Kira had progressed (basically a hothead, to a balanced officer who had lived a tough life but now respects authority).

I also watched DS9 concurrently with the sixth and seventh seasons of TNG. Some of the story arcs make more sense that way.

I've seen every Trek ep save TAS, so you needn't worry about spoilers. I was just highlighting the character voices - Odo doesn't have that "gruff" voice, sounds several years younger in fact, despite him sounding "normal" as of S2 or 3. Rom sounds like Brunt, Shran (ENT) and every Trek character Combs has portrayed, I guess the voice-change was just a way of being able to, by way of Rom, insert a little Ferengi comedy into every ep he appears in. I just haven't noticed voice changes in any other Trek series, and they all took a little while to find their feet.
