Unless it's a super secret ritual that no-one knows about. I certainly could be possible that they're together and not married but haven't told others. I have to be honest. I don't see how she was cold or cruel. She seemed genuinely uncomfortable and regretful, and she made it pretty clear before leaving that the time they were taking was for their own, independent healing, and not for the healing of the relationship.

Spock has had a grand total of one other relationship in his life. There was no way he was going to move on from her in that time. She knew that he would be hoping that a relationship would start back up. Despite this, she walked into his workplace with a boyfriend and told a romantic story of getting together. He had to attend a work relevant celebration (maybe not literally that but it seemed implied that federation officers would be expected to attend) and realistically didn't have much opportunity to escape. He was forced to process his feelings in front of her. That's brutal.Indeed, she specifically told him not to wait for her.

I would hate to attend a work event and find the person I'm still in love with who broke up with me is sitting at the next table with their new partner and actively demonstrating how in love they are. It's worse to realise that he genuinely hoped and believed that they could get back together at this event, there isn't much of opportunity to leave and many of his colleagues fawning over the new relationship. I think that this would challenge the coping skills of most people.
A discreet warning was absolutely needed. If I was in this position as Chapel and knew that I was stepping into our shared workplace with a new love and he was very much hoping that we would get back together, I would make sure that he was warned and had the opportunity to be elsewhere. I think that a good friend who offer this consideration so I'm shocked that they didn't have Chapel react with more empathy. She's been very popular so it seems to be a particularly harsh direction to take her character. If she still cares about Spock (and very possibly still loves him based on Jess Bush's words) then she could have shown that by being a great friend and considering his needs.
I appreciate that they want and need Spock and Chapel broken up by TOS but there are ways to do this that would keep the underlying love story alive and bring out positive traits in both characters. I didn't see this here. I hope that some of the conflict that others saw in her is expanded upon in later episodes across the season.

Chapel is young and this is Spock's first real attempt at a human relationship after Leila. It's no wonder it's lurching around like a drunk rhino.
In fact, you could replace Leila with Chapel in This Side of Paradise now without missing a beat.
