I think the strong implication is that by TOS, Spock is intentionally strongly leaning into his Vulcanness, far more than most full Vulcans would, and never quite comes back from that; and it gets so ingrained over the years that when he starts openly accepting emotion & such again in his later movie years, he never really loses the “formality” that’s become natural to him.

I always thought Spock tried harder to be Vulcan because of his human half when he was younger.

Well, he had to go from smiling to "Ah, one of your human emotions," somehow. :vulcan:

Let's not kid ourselves here. Spock does not keep his emotions in check very well in SNW or Kelvin universe. He may have the occasional smirk or smile in TOS but he would not go around the ship saying he is bedding the ships nurse. That would be completely out of character for Nimoy Spock. Even when he went to the past and reverted back to an emotional Vulcan and was with Zarabeth.... immediately after he came back to the present he was back in full logic mode. Dismissing his love after with Zarabeth as something 5000 years in the past. Dead and buried. He had returned to the present in every sense he says to Mcoy...

He’s not exactly going around leeringly telling people, “See her? I’m having that!” or something.

More importantly:
Kelvin? Diverged timeline after the early years, and he’s still pretty formal. (And they killed his frickin’ planet.)
SNW? He’s still in the process of turning into that guy in TOS, and he’s not there yet. But getting more so, not least because of the whole Chapel thing. A bit down the road, he’ll be there, and that’s when TOS picks up.
 
Like a quarter of the Cage is not canon. 😂 Also I already mentioned it and his little smile etc. Still not as bad as SNW.
It's canon. I don't treat as not.

So you have Spock for from smiling and shouting to commenting on Earth emotions. I don't mind an explanation of this change by a character between two of my favorite Trek stories.
 
He's great. I don't feel like he's been all that much more emotional than Nimoy was, he just gets more focus on a regular basis and doesn't do the dance of denying having emotions and pretending his actions are the result of pure logic even when they're clearly emotion driven nearly as much as TOS Spock.

Honestly though I think Tim Russ as Tuvok was the only Vulcan actor who ever did a really convincing job on that front, and even then we see his emotions pretty regularly.
