Food cubes

As far as props go, wouldn’t they avoid real food due to the hot studio lights and subsequent visual deterioration ?

Yup. I recall that even a dilution of water in a ton of glue will be used to simulate milk, and the actor has to pretend-sip. Ditto for the use of shaving cream as whipped topping.

I think I Love Lucy did the reverse in "Lucy's Showbiz Swan Song". During the "barbershop quartet" scene, everyone gets "shaving cream" in their mouths.

In "Ricky Has Labor Pains", to make Lucy's pregnancy craving food palatable for the actors, they used mashed potatoes and gravy, to substitute for ice cream with chocolate sauce, with sardines.

In "Lucy Does a TV Commercial", the awful (until you get drunk on it) Vitameatavegamin was actually apple pectin.
 
I thought I read that they were made of Playdoh!
honestly, i suspect it would have depended on the shot. some scenes certainly look like they used colored modelling clay, like the buffet table in "journey to babel", but that close up from "The Conscience of the King" certainly looks like they used some actual Melon dyed unearthly colors. probably because the clay versions would have looked obviously fake.
 
Doesn't have the shiny semitransparent look of jello. I would think tofu with vitamins, dyed with food coloring and flavored, for what they are in-universe, and possibly playdough on the set.
 
I’ve always assumed they were some alien food that has become popular in the Federation.
 
I don't recall ever seeing the food cubes actually eaten in an episode
We do see a couple of gold-skinned alien delegates loading colored food cubes into their glasses before pouring liquid on top in "Journey to Babel."

So maybe these were some kind of dehydrated food cubes that had their flavors activated by the liquid?

In this episode I think the food is mostly melons with food coloring.
