The Parliament-class ships are all named for 21st century British Prime Ministers of the pre-World War III period. So there will be 14 ships just for the first three decades of the century.

There is a Nova class on the lower level which bears a slight similarity to the Protostar.

There's no Nova class at the museum either. The lower level has the Defiant, a Sabre, an Akira and a Romulan Bird of Prey.

The Saratoga at the museum is the one from ST4, modified to represent the Saratoga from DS9.

The Sentinel, NCC-68455, was mentioned in DS9 but the class wasn't shown. In non-canon books and comics she has that same registry and Sonya Gomez was Chief Engineer during the Dominion War
