How would you retcon Strange New Worlds?

I’d rather her intolerance of the Romulans have its origins of how Ortegas has heard horror stories from the war, and seen the numerous war memorials, rather than a personal connection to that event. Therefore, there’s no hard canon to events relating to that war beyond what’s already been established. And would give her a reason to be a hardliner with Federation security.
But what would she have heard? The war was a hundred years ago. It's difficult enough to buy that Stiles would have such virulent hatred over a war from a hundred years ago. Does anyone hate Austrians because their great grandfather died in World War I, much less because they heard about the Austrians' use of mustard gas in that war or whatever?

Never underestimate the power of Generational hate.

Hearing Romulans using atomic weapons during the conflict would be enough. That’s likely a big deal considering that WWIII was a turning point in Earth history that humans realized they have to stop being so destructive towards one another. And then they go out into space and find a species more comfortable using atomic weapons then they are and possibly content with mutual annihilation.

And Ortegas hasn’t been able to change her mind after growing up with these stories, as she has nothing to go on that the Romulans themselves have changed. As they are no contact with the Federation for a whole century, and even during the war their identities are a complete mystery.

Stories told over and over again of mysterious aliens that wanted to kill all humans - even if its an exaggeration of what actually happened - can cause generational hate towards the Romulans.

I don't know about Austrians per se, but almost a century later I think a lot of people are still wary of the Germans. And I know that over a hundred fifty years after the fact, there are still U.S. Southerners who hate U.S. Yankees for winning the Civil War.

Sadly there's a loud group in fandom who want white men in charge only and no LGBTQ+ representation. After Discovery getting buried for it's diverse cast and Picard S3 being heavily lauded and just happens to fit the above it's going to be interesting to see what the next wave of Trek series' bring. If TPTB back off on diversity in Trek, it's not Trek anymore.

As for Ortegas, she's one sleeve tattoo from being Trekverse insert of someone I worked with for years. They're so completely similar in look, speech patterns etc that it's hard to separate the TV character from some less-than-wholesome things I know of this person.

After Discovery getting buried for it's diverse cast and Picard S3 being heavily lauded

That seems a little simplistic and unfair given Discovery was just renewed for a fifth season. And most of the criticism of Discovery was aimed generally at its radical redesigns, how it affects canon, its writing and (bland) characters while apart from Picard season 3 having an interesting storyline, there is obviously more emotional connection to the classic TNG cast and decades of lore referenced.

No.

It's stupid question. We have seen both iterations in multiple productions. It's simply an artistic choice not a literal history. No explanation required. Denmark looks like a cheap backdrop. Denmark looks like a full set. It's still Denmark.
 
The simplest explanation - maybe you don't require one, but I do - is that

The SNW Enterprise will one day be refit to its TOS appearance.

I can't say I'm 100% in love with this idea, because I really like the DIscoprise and I was fully prepared for it to become the definitive look.

But SNW did set up at least one possible teaser, since its version of the Enterprise has 203 crew on board, just like in "The Cage". So obviously something has to happen for it to more than double the size of that crew to TOS' 430.

Maybe one of the side effects is that the ship becomes more crowded and, dare I say it, clunky. Just like TOS.

Then it works.

Personally my interpretation is this: it's a dramatic presentation of ship's logs. Pike's told one way, and Kirk's another. "Those Old Scientists" is a holoprogram ran by people in the 24th century.
