Spoilers Season 1 episode previews, trailers, and images

And up until Strange New Worlds; (including the Remastered TOS), Federation Starship/ Constitution Class ship's Phaser fire was blue; yet in every instance of 1701 phaser fire depicted on SNW has been reddish-orange...:shrug:;)
During Kirk’s five year mission the Enterprise phaser banks were obviously retrofitted with some form of experimental weapons technology. It was probably a result of trying to be more energy efficient and eco friendly, hence the ‘cooler’ blue colour of the beams rather than the ‘heated’ lava like red which obviously drains power banks a lot faster. This experiment obviously failed, so the Starfleet standard of weaponry reverted back to older yet still effective technologies which produce the more dangerous reddish orange beams should Starfleet vessels find themselves in ‘trial by combat’ situations where they need an upper hand in terms of firepower when diplomacy has failed. This tech is obviously still used in the 24th century too. It get’s the job done, in particular when breaking up dangerous asteroids that the deflector dish has failed to repel.

They must have dabbled with the tech? The more hostile that species become towards the Federation in general, the ‘redder’ the phaser beams become as a warning? Perhaps phaser beams become blue when put in ‘eco’ or ‘energy saving’ mode, but this type of cooling of the phaser banks takes a very long time and is obviously reversible… the more frequently that phasers are used in an episodic format, the hotter that the phaser banks get and therefore they become more red? Pike’s phasers in Strange New World’s are smoking hot as well as red! :D
