That's because the Startrek authors are not only trapped in an unconscious but omnipresent anthropomorphism but also machismo (IE male-female stereotyping) as well otherwise you'd have a harder time identifying alien genders.
I mean. it's a visual shorthand so it makes sense, if a bit lazy. Just like monocultures. Irritating but understandable.
I liked the reboot Trek movies and Beyond was the best of the three.
Discovery era Klingons were the best looking Klingons.
I liked all of Enterprise and the Temporal Cold War I liked a lot. Daniels was cool.

DSC Klingons would be fine if they were shown in the series to be a subset within the Klingon Empire and we also saw TOS Style Augment Klingons and TNG Era ones for variety. But nope.
I get that but I just like the look they created, if only Vulcans had been given another redesign to look a bit more alien too.

Good for both of us. Neither do I. But if you're going to HAVE a vast ficitonal universe show more of it. Empires aren't monolithic entities where every subject looks or behaves identically.
It's the entertainment and wow factors. Show me cool things we haven't yet seen in these fictional species and expand on what we already know. Variety in fiction is rarely if ever a bad thing. And every era of Trek has been lazy when it comes to this.

For what it's worth, I agree with each one of those (though I think the red angel plot lost its way at the end).
And I agree with you, it was good but that end bit just, yeah towards the end of the plot it irritated me for a number of reasons.
Because all fans want is comfortable and familiar.
