Why USS Cerritos of all names?

I mean - why give a Latino-sounding name to one of “the least important ships in Starfleet” seemed like a good idea to the creators in these tense times?
To be fair, they also gave the coolest ship in Trek, La Sirena, a Hispanic name too.
 
Least important is definitely a matter of opinion or point of view. If we're taking the opinions of disgruntled second-tier personnel or people fresh out of the Academy, then we need to consider their opinion might be colored. Jealousy can be rotten.
 
If they wanted to emphasize the ship was less important, it wouldn't even have a captain. Sisko started his show as a commander to emphasize DS9 was a backwater, "non-important" place.

The entire origin of the lieutenant commander rank is (from https://en.wikipedia.org/wiki/Lieutenant_commander ) :

Lieutenants were commonly put in command of smaller vessels not warranting a commander or captain. Such a lieutenant was called a "lieutenant commanding" or "lieutenant commandant" in the United States Navy, and a "lieutenant in command," "lieutenant and commander," or "senior lieutenant" in the Royal Navy. The USN settled on "lieutenant commander" in 1862 and made it a distinct rank.

They could have had a Lieutenant Commander commanding the Cerritos to emphasize it's lower importance. I mean the Kelvin movies already had an ensign really commanding the Enterprise so why not?

Possibly because it's a captain who wants to prove herself?

And Kirk was a lieutenant.
 
Kirk was a cadet of lieutenant rank in the 2009 movie, the same as Saavik was in The Wrath of Khan. How a cadet can have officer rank is unclear to me, but there's TOS precedent -- Kirk was an ensign on the Republic, but Captain Garrovick of the Farragut was his first commanding officer out of the Academy. (Although I suppose Garrovick could've been his captain on the Republic and then they both transferred to the Farragut, but the Okudachron interprets the Republic as a cadet posting.)
 
Well awhile back there was a thread on the Non Top Tier academy graduates, Its still an academy education, but where do they go? well.. The Cerritos! Still a ship!
As for Not Important, Well its not an exploration ship, its a second contact, follow up ship. Which is still important as they might discover new things, discover extinct species and there tech, new medicines etc. Yes you might not be "First" but if I was a scientist, I would rather be on the 2nd ship that can really delve into a problem for Months.
But as a command crew on the ship? Crap assignment..
Helm.. Maintain orbit.. which the computer does.. anybody have any Sudoku?
Security.. Depends on the planet, if its safe, then probably some lame escort duty's for the scientists.
Ops would be interesting since there science.
Captain? Depends on there interests, if there not a science type and a hard a$$ then that would be a crap assignment.

As for a commander or a Lt. commanding, its still a mainline starship. A commander may command a patrol or escort ship, maybe a freightor or a Fast Messenger craft. as for Lt. or Lt. Cmd may be a Runabout or similar sized craft, something like a PT boat. Have a Runabout or 2 at some small planet or base that may be in charge of defense/patrol the area or courier duty from base to base.
