It's an impossible choice between TOS, Refit and Discoprise, but the Refit from The Motion Picture just manages to snap the top spot for me.
The Kelvin Enterprise is quite nice, but doesn't feel like an Enterprise to me. It has weirdly oversized nacelles and its shape was massaged between films to the point that it looked a bit odd by the time it appeared in Beyond (this was mostly hidden with flattering camera angles in the movie, but the Eaglemoss model reveals how weirdly shaped it became.) It works ok as an alternate reality take on the design though, and doesn't really spoil my enjoyment of those films.

That scene would've been so much better with the original there.
Back in '78, as a boy, when I first read of TMP in development. I really thought that Paramount was going to take the original 11 foot TOS Enterprise back from the Smithsonian to detail it up for filming TMP. I though that only the interior sets of TOS 1701 were going to be refit and updated. That's all. It would have been what you wanted in TOS 1701 in drydock refitting only the interior of the Enterprise.

I was never a huge fan of the original TOS design, but I loved how Discovery updated it, both the exterior and the interior sets. That being said, the TMP refit is the most gorgeous iteration of the design and I instantly fell in love with it the first time I saw it, even though it was the 1701-A in The Undiscovered Country, if I remember correctly. The Abramsverse design just fails to elicit any emotional response from me at all, however.
