This is strange. Why just those two? Since it's a holo-display of Enterprises, why not show the NX-01, the TMP refit, E-B, E-C and E-E along with them? Or maybe a glimpse of whatever ship currently holds the name, if the E-E has since been retired?

The Romulans are sneaky little buggers at the best of times and dont like to give too much away.The Romulan ship looked good - clearly related to the Valdore. Strange that it's only the sixth Romulan ship we've ever seen in Trek history. Well, seventh if you count the Narada.
