Couldn't wheelchair Pike have had a Betazoid assistant

To me implied ment something in a episode, not BTS stuff.

That’s true; there’s nothing I can recall in TNG proper that overtly states that Betazoids weren’t members of the Federation even as far back as TOS. But “Betazoid” is still a TNG reference, not a TOS reference.

And Deanna’s father was human, not Betazoid. For all we know, he could have married Lwaxana before Betazed became a Federation member.

Betazed wouldn't need to be a Federation member to send one of their own to help Pike. DS9 showed tons of Bajorans, non-Federationers, working closely with Starfleet.

But “Betazoid” is still a TNG reference, not a TOS reference.

Which doesn't mean anything when it comes to in-universe chronology. We didn't learn about First Contact until the TNG movies. We didn't learn about the Bell Riots until DS9 or the loss of the Ares IV probe until VGR. New shows fill in old history all the time.

I honestly don't recall- was it ever established that the Federation had even encountered the Betazoids by the time of early TOS?

Met? yes.

Encouraged any of them to leave their planet and help the Federation? nope. Otherwise some of them would have helped, blindfolded, with the early Medusan contact.

You could say the same about Vulcans. Arguably blindfolds or visors wouldn't have been enough for a long-term interaction, which may be why Miranda was chosen for the program over Spock.

The point is, there are other known telepathic species in the Federation -- Deltans, Aenar (who are naturally blind already), certain Argelians, etc. Heck, if you read the screen text under Gary Mitchell's esper rating in the second pilot, it reveals that the natives of Deneb IV are telepathic too. (Though this would have to be a different interpretation of Deneb IV than the one in "Encounter at Farpoint." Star Trek Star Charts interprets the TOS "Deneb" as the much nearer Deneb Kaitos system.) Clearly there were more options available than just Miranda Jones, but they didn't end up getting picked for whatever reason. So you can't rule out the Betazoids being known to/part of the Federation based on that episode.

What difference does that make? The entire franchise is available to mine.

Did Pike have eyes? Ears, possibly - although it seems the only one capable of actually having meaningful communication with him was Spock, with a potential telepathic component to it. But did Pike ever demonstrably see anything? Talosian illusions of old home videos don't really count...

I'm pretty sure Kirk and Mendez asked Pike questions that he responded to. Also Mendez tells Pike "You remember these gentlemen" as if Pike would be able to see Kirk, McCoy, and Spock.

It might be just actor error, but you do see Pike's eyes moving according to the action in certain scenes I believe. Don't know how "canonical" that is.
