That's not a parody. It's Leonard Nimoy's insight into Spock's character. Assuming that bearded guy is Spock at the 1:37-mark, he's fighting what looks like three people at once. Not a lot of time to neck pinch three people who are coming right at you.

As far as the Vulcan Hello, I agree that Spock is generally non-violent but that's specific to his character, not necessarily Vulcans from centuries ago who might've been looking for a pragmatic response to the Klingons. Sarek tried to dissuade Burnham from using the same response to the Klingons.
The Vulcans, like many other prominent Star Trek races, were perceived by fans as so monolithic that the reality seldom, if ever, lived up to those perceptions. Fans love to dig their heels in an say "All Vulcans were logical pacifists." Simply not true.

Yup. Like I mentioned in another thread about how Vulcans claim to never lie, except they have numerous times when the situation called for it.
This isn't Dungeons and Dragons....these are supposed to be entire races that have massive and diverse populations.
